Birchermuesli



Birchermuesli is a traditional food created in Switzerland around 1900 by Dr. Maximilian Bircher-Benner. Believing that the diet of cereals, fruits and vegetables is better for humans than a heavy meat-based diet, he created birchmesses with a composition of oats, fruits, nuts, lemon juice and condensed milk for patients in his sanatorium in Zurich. This food is still eaten until now and not only eaten at breakfast, but sometimes even at night.

INGREDIENTS :


  • 1kg rolled oats
  • 500ml apple juice
  • sugar, to taste
  • 250g coconut yogurt
  • 500ml almond milk
  • Poached pear
  • water
  • 4 pears
  • 1g saffron
  • 2-3 bay leaves
  • 2-3 star anise
  • zest from one orange
  • garnish (optional)
  • puffed quinoa
  • berries and strawberries


HOW TO MAKE :

1. Soak oats with apple juice for at least one hour so juice is well absorbed.

2. Add coconut yogurt, almond milk and sugar to the soaked oats and stir through.

3. Refrigerate for 4-5 hours

4. For the poached pear, peel pears, but make sure you keep stalk intact.

5. Place in a pear in a pot and add rest of ingredients except saffron.

6. Bring the water to the boil and add saffron to the centre of the pot. Turn to a simmer and place a disc of baking paper to keep the heat in. Continue to slowly cook the pear until soft. Check for softness and colour should take about an hour.

7. Use a slotted spoon to transfer pears and allow to cool.

8. Serve soaked muesli in a bowl, topped with a saffron pear and finish with puffed quinoa.
