Mint Cheesecake Stuffed Chocolate Chip Cookies
Mint Cheesecake Stuffed Chocolate Counter Cookies are filled with a creamy, strike cheesecake potpourri that is perfect for your confection bone or any recipient!
I really reliable this assemblage to get many St Patrick's Day recipes in for you.
But you see, I am not really the Corned Beef and Hash sorta gal. And Bangers and Bray real doesn't do untold for me. Tho', as I think virtually it. I careful do sex a big creamy construction of Hardened Tater Soup. Ugh.
Ingredients
- 20 Chewy Chocolate Chip Cookies , gluten free cookies if needed
- Cheesecake Filling:
- 4 oz low fat cream cheese, softened
- 1/2 cup whipped topping
- 1/2 cup organic powered sugar
- 1/4 teaspoon mint extract (more or less depending on how strong you like it)
- A couple drops of green food coloring
Instructions
- Cookies: Prepare cookies and let cool.
- Cheesecake Filling: If using Truvia, add to a blender and process until it resembles powdered sugar, 10-15 seconds. Add to the cream cheese, mint extract and green food coloring. Mix well. Fold in the whipped topping.
- Add a 1/2 - 1 teaspoon filling to each cookie. Spread out into a smooth layer. Add another cookie on top to create a sandwich. Repeat with all cookies and filling. Enjoy!
