My circle of relatives is by no means spiritual. yes, i'm Jewish but I bear in mind myself greater culturally Jewish than spiritual. INGREDIENTS
- 1 cup cooked quinoa (1/2 cup uncooked)
- 2 medium tomatoes, seeded & cubed
- 1 small English cucumber, seeded & cubed
- 1/2 medium red onion, cubed
- 1/2 cup curly parsley, chopped
- Juice of 1/2 lemon
- 1 tbsp olive oil
- Salt and pepper, to taste
INSTRUCTIONS
- Cook quinoa according to package guidance.
- Combine tomatoes, cucumber, purple onion and parsley.
- Add in quinoa.
- Top with lemon and olive oil.
- Upload salt and pepper to taste.
