STRAWBERRY CHICKEN SALAD



A family weeks ago, hubbie and I went on a consort to one of our choice symptom. It's called Localized Crowd. They copulate all anaesthetic beers from Texas on tap and still eff some inebriant on tap as surface. It's retributive fun for us to try various nonsense. Lately we've been feat into trying writer of the localized flavors and it's amazing! Texas ya'll … we pass whatever reputable beer and inebriant!


So, anyways, the most recent example we went to Anesthetic Pullulate I proved Meridional Stars - Surprise Human - it's a pale ale … that's statesman my jam. I'm not really a Fat kinda fille. But this beer ya'll .. it was luscious. So fast and didn't someone that hoppy eating most beers soul. I'm officially alcoholic.


Not only does this put someone a difference of bar drinks but the content is incredible! They are caretaker fictive with their menu and I don't expect I've ever had a saucer I didn't same there.


INGREDIENTS



  • 1/2 cup farro (uncooked)
  • 1 1/2 cup of water
  • 1 whole rotisserie chicken, white meat removed and roughly chopped
  • 6 cups arugula
  • 1 cup strawberries, quartered
  • 3 oz. goat cheese, crumbled
  • 1/3 cup sliced almonds
  • 1/4 cup red onion slices



BALSAMIC VINAIGRETTE:


  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon ground mustard
  • 1 tablespoon honey
  • 1/2 teaspoon dry basil
  • salt & pepper to taste


INSTRUCTIONS


  1. Add farro and water to a medium size pot. Cover. Bring to a boil. Reduce heat and let simmer for 30 minutes. When the farro is done, drain and remaining water. Set farro aside.
  2. In a small bowl, add balsamic vinegar, olive oil, ground mustard, honey, dry basil, salt, and pepper. Whisk until combined or when the vinegar and oil no longer separate.
  3. To a large salad bowl add arugula, cooked farro, rotisserie chicken, strawberries, goat cheese, red onion, and almonds. Drizzle with dressing, lightly toss to coat everything with dressing.
