This Apple Walnut spinach salad with balsamic sauce Dressing may be a delicious winter salad recipe full of healthy green, fruit, nuts, sweet onion, crisp bleu and chevre butter, all topped with a sweet balsamic salad sauce!

I don't realize you, but my love for salads is certainly not dead with late summer. I mean, that says salads just for the summer anyway, right?

I love putting a seasonal spin on my favorite salad, which allows me to enjoy local ingredients within the season and still get all my veggies on! This Apple Walnut spinach salad with balsamic sauce is really the winter version of my favorite "Berry Walnut spinach Salad" That I made a minimum of every week in summer.

I've exchanged fruit for a delicious apple, added 2 of my favorite cheeses – bleu and chevre , because i could not decide one! -and choose a scrumptious balsamic vinaigrette sauce to simply top it all off!

Of course, if you are not a lover of bleu or chevre , be happy to skip the cheese in the least or choose the one you wish the foremost . I'm a fan of second and therefore the bleu is tangy paired with chevre butter on this Apple Walnut spinach salad with balsamic sauce, but the sweetness of the salad is you'll make them however you please! Just do not forget those that are healthy green!!

APPLE WALNUT SPINACH SALAD WITH BALSAMIC VINAIGRETTE

INGREDIENTS:
For the salad:

  • 6 cups fresh baby spinach
  • 1 golden delicious apple thinly sliced
  • 1 honeycrisp apple thinly sliced
  • 1/2 small red onion thinly sliced
  • 1/4 cup walnuts roughly chopped
  • 1/4 cup goat cheese crumbled
  • 1/4 cup blue cheese crumbled
  • For the dressing:
  • 3 tablespoons balsamic vinegar
  • 4 tablespoons maple syrup
  • 2 teaspoons olive oil
  • 1/2 teaspoon dijon mustard

INSTRUCTIONS:

  1. Add the spinach, apple slices, onion slices, and walnuts to a large bowl. 
  2. Whisk the dressing ingredients together in a small bowl.
  3. Pour the dressing over the salad, toss well, and top with the goat cheese and blue cheese.
